Chicken Stir Fry Recipe - Baby-Led Weaning Adaptation
Ingredients
- 1 lb chicken breast

- 2 tbsp olive oil
- 2 cups broccoli
- 1/2 yellow bell pepper
- 1/2 red bell pepper
- 1/2 cup baby carrots
- 2 tsp ginger
- 2 garlic
- 1 tbsp corn starch
- 2 tbsp water
- 1/4 cup chicken broth
- 3 tbsp soy sauce
- 1/4 cup honey
- 1 tbsp sesame oil
- 1/2 tsp red pepper flakes

- [BABY PREP] CHOP the **broccoli**, **yellow bell pepper**, **red bell pepper**, and **baby carrots** into small pieces. Keep the baby's portion separate from the family's larger pieces.
- [BABY PREP] HEAT 1 tbsp of **olive oil** in a large skillet over medium-high heat. Add the baby's portion of **chicken breast** (unseasoned) to one side of the pan, and the family's chicken (seasoned with **salt and pepper**) to the other side, ensuring they do not touch. Cook until the chicken reaches an internal temperature of 165°F.
- [PULL POINT] REMOVE the baby's cooked **chicken breast** from the skillet and set aside.
- [BABY PREP] ADD the remaining **olive oil** to the skillet. Cook the baby's portion of **broccoli**, **yellow bell pepper**, **red bell pepper**, **baby carrots**, **ginger**, and **garlic** on one side of the pan with a splash of **cold water** to steam until very soft and easily squishable. Cook the family's vegetables on the other side.
- [PULL POINT] REMOVE the baby's soft vegetables from the pan before any sauce ingredients are mixed.
- [BABY PREP] PREPARE the baby's plate: Cut the cooked **chicken breast** and soft vegetables (**broccoli**, **yellow bell pepper**, **red bell pepper**, **baby carrots**) into safe 1cm bite-sized cubes. Allow to cool completely before serving.
- MIX the **corn starch**, **cold water**, **low sodium chicken broth**, **low sodium soy sauce**, **honey**, **toasted sesame oil**, and **crushed red pepper flakes** in a bowl to create the stir fry sauce.
- FINISH the family meal by adding the sauce and family's chicken back to the skillet with the family's vegetables. Simmer for 2-3 minutes until the sauce thickens, and serve warm.
