Nando's Portuguese chicken and rice - one pot recipe - Baby-Led Weaning Adaptation
Ingredients
- 500g chicken thigh
- 2 tsp paprika
- 1 tsp garlic powder
- 1 tsp oregano
- 1/4 tsp coriander
- 1/4 tsp cayenne pepper
- 1 tbsp brown sugar
- 1 tsp salt
- 1 tbsp olive oil
- 1/2 tbsp lemon juice
- 2 tbsp olive oil
- 2 cloves garlic
- 1 small onion
- 1 bell pepper
- 1 1/2 cups basmati rice
- 1/4 tsp chili flakes
- 2 tsp turmeric
- 2 1/4 cups chicken stock
- 1 cup peas
- 1/2 tsp salt
- to taste perinaise
- to taste green onion

- 500g chicken thigh

- [BABY PREP] KEEP one **chicken thigh** whole for the baby. Cut the remaining **chicken thighs** into bite-sized pieces for the family.
- [BABY PREP] SLICE a few thick, finger-width strips of **red capsicum** for the baby. Chop the rest into 1cm squares for the family.
- [BABY PREP] SEPARATE a small saucepan for the baby. Add the baby's whole **chicken thigh**, **red capsicum** strips, a tablespoon of **peas**, a pinch of **basmati rice**, a pinch of **paprika**, **garlic powder**, **oregano**, **coriander**, **turmeric powder**, and water. Do NOT add **salt**, **brown sugar**, **cayenne**, or **chilli flakes**.
- HEAT **extra virgin olive oil** in a large pot over medium-high heat. Add the family's seasoned chicken pieces and sear until golden.
- ADD the minced **garlic**, diced **onion**, and chopped **red capsicum** to the family's pot. Sauté for 3 minutes.
- STIR in the **basmati rice**, **turmeric powder**, **chicken stock**, **chilli flakes**, and **salt** to the family's pot. Bring to a simmer, cover, and cook for 15 minutes.
- [BABY PREP] SIMMER the baby's separate saucepan over medium-low heat until the **chicken thigh** reaches an internal temperature of 165°F, the **red capsicum** is fork-tender, the **peas** are soft, and the **basmati rice** is fully cooked and mushy.
- [PULL POINT] REMOVE the baby's portion from the heat. Slice the cooked **chicken thigh** against the grain into finger-width strips. Flatten each **pea** completely with a fork to eliminate choking hazards.
- STIR the frozen **peas** into the family's pot and cook for 5 more minutes until the rice is tender.
- [BABY PREP] ALLOW the baby's finger-width chicken strips, soft capsicum strips, mushy rice, and squished peas to cool to room temperature before serving.
- SERVE the family's Nando's chicken and rice warm, topped with sliced **green onion** and a drizzle of **Perinaise**.
